How to Brewing :
- Water selection: Natural mineral water is preferred, followed by purified water or tap water.
- Tea dosage: Use approximately 5-8 grams of tea.
- Tea utensils: Choose according to personal preference, such as a Gaiwan or a purple clay teapot.
- Water temperature: Boil water continuously at a temperature of 95-100 degrees Celsius, or maintain it in a warm state.
- Brew time: The first infusion is to rinse the tea leaves before drinking. The water should be boiled, and the speed of pouring should be fast, because if the soaking time exceeds 3 seconds too much substance will be wasted. For subsequent infusions, it is recommended to steep the tea for 1-10 brews, with an infusion time of 0-10 seconds.
However, one should approach the brewing process flexibly, adjusting to the specific nature of the tea, the season, species, and individual preferences, and brewing with mindfulness to fully appreciate the tea.
Basic Guidelines for Brewing Milan Dancong Tea:
-
Each time when covering the tea bowl, make sure to drop the water dry to avoid excess tea.
-
Similarly, do not leave any excess tea in the fairness cup. Either divide it evenly or discard it, and do not mix it with the next brew.
-
Avoid soaking the tea leaves for too long to prevent bitterness.
Tip for Brewing:
Milan Dancong tea is not suitable for cold drinking or drinking on an empty stomach. When brewing this tea in a glass cup at the office, take about 3 grams of tea leaves and add boiling water to the cup. Cover the lid to prevent aroma loss and maintain the temperature. After 5-20 seconds, the tea can be tasted. When serving guests or tasting on your own, observe the color and fragrance of the tea soup, then sip the tea and taste the flavor, and appreciate its sweetness aftertaste.
